Collagen Glow Yoghurt Bark

* This is one of those simple freezer treats that feels a little bit indulgent while still supporting your hormones. With protein from collagen, healthy fats from nuts, and antioxidant-rich berries, it is a delicious option for an afternoon snack or something sweet after dinner. Best of all, it takes only a few minutes to prepare and keeps beautifully in the freezer.

Ingredients:

  • 1 cup coconut yoghurt (or Greek yoghurt - if tolerated)
  • 1 scoop InnerBeauty Collagen
  • 1-2 tbsp honey or monk fruit sweetener
  • ½ cup berries of choice (blueberries, raspberries, strawberries)
  • Nuts of choice for toppings (such as unsalted pistachios or almonds)
  • Optional: melted dark chocolate for drizzling

Instructions:

  1. In a bowl, combine the yoghurt, InnerBeauty Collagen and sweetener. Stir until smooth and creamy.
  2. Line a tray or plate with baking paper and spread the yoghurt mixture evenly to approximately 1cm thick.
  3. Sprinkle over the berries and chopped nuts. Drizzle with melted dark chocolate if using.
  4. Place in the freezer for 2-3 hours, or until completely firm.
  5. Break into bark pieces and store in an airtight container in the freezer until ready to enjoy.
