Beef & Broccoli Stir-Fry

A classic Insulin Resistant-PCOS dinner that combines grass-fed beef, providing highly bioavailable iron and zinc for energy, with cruciferous vegetables like broccoli, which contain DIM to support estrogen metabolism and promote liver and muscle health.

Ingredients:

  • 6 oz grass-fed flank steak, thinly sliced against the grain
  • 2 cups broccoli florets
  • 1 cup sliced bell peppers
  • 1 tbsp sesame oil
  • 1 tbsp coconut aminos (soy-free alternative)
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes (optional)

Instructions:

  1. Heat sesame oil in a large skillet or wok over high heat.
  2. Add beef strips and sear quickly until browned (about 2-3 minutes). Remove beef and set aside.
  3. Add broccoli and bell peppers to the same pan with a splash of water. Cover for 2 minutes to steam-soften.
  4. Remove lid, add ginger and garlic; sautรฉ for 1 minute until fragrant.
  5. Add the beef back into the pan and pour in the coconut aminos.
  6. Toss everything together for 1-2 minutes until the sauce thickens slightly and coats the ingredients.
